The repeated cooking of Kottu and fried rice destroys their nutrients and generate harmful substances that could be toxic and cancerous, says public health inspector Gemunu Saliya.

Such substances are called heat-generated food toxicants, he says.

In 2002, a team of Swedish scientists found these toxicants and the European Commission launched project HEATOX to inquire into the matter further, say Saliya.

Also, foods containing carbohydrates cooked at high temperature generates 5-hydroxymethylfurfural, which is very harmful to kidneys, he adds.
